This humble, inexpensive hand pie sustained him (and likely his ancestors back in the day) during his tenure on the Lower East Side, when entering the door of Yonah Schimmel's felt like entering a time machine, but one you could eat. You'll discover the backstory of the knish, learn about its origins in the old country, and where it really took off: New York City at the turn of the last century. You'll learn about the Knish War of 1916, the various types of knish and their morphology, and beloved knish bakers such as Mrs. Stahl.
In real time, you'll learn how to make potato knish filling, how to mix, roll out, and form knish dough, and bake them. And then, best of all, we'll eat the product of our labor and drink a bit of wine together.
